Heleen completed her bachelor’s and master’s Nutrition and Health at Wageningen University & Research, with a specialization in Food Digestion and Health. She started as a PhD student at the department of pharmacology and toxicology in February of 2023. With her PhD project, she aims to assess the relation between advanced glycation endproducts (AGEs) and inflammatory bowel disease (IBD). Using both toxicological and epidemiological methods, she will investigate effects of AGEs derived from different sugar and protein sources on intestinal permeability and inflammation, and their interactions with the gut microbiota. Moreover, the association between AGE-consumption and IBD symptom severity will be investigated in patients using food intake data.
