About Info

Hi, I'm Vaios Fytsilis and I come from Greece. I studied chemistry (BSc) at the Aristotle University of Thessaloniki and applied biochemistry (MSc) at the University of Patras, where I focused on breast cancer research. I'm currently working on the safety assessment of dairy proteins produced through cellular agriculture at UM, in a project that promotes sustainability through the protein transition. My research focuses on protein-induced health effects and also touches upon the presence of chemical contaminants in foods. My main objective is to develop risk assessment strategies for novel and GMO-derived proteins, based entirely on non-animal methods.
